SpainThis is not hotel-specific: if you can, I’d suggest avoiding an overnight stay inside the Gruyères enclave. Parking is limited to paid lots outside the village, prices are high, and there isn’t much to do that you couldn’t enjoy just as well on a day visit. As for the hotel itself, my only real criticism is the breakfast. The selection was very limited and the quality left something to be desired. You’re probably better off spending your euros on breakfast elsewhere.
Nice enough: The hotel is located in the heart of the Gruyères enclave, which can be both a blessing and a drawback (more on that below). The staff were friendly, the hotel was clean, and the beds were comfortable, no issues there. What follows is more advice for future tourists than criticism of the hotel itself:

SwitzerlandMy fondue for dinner was not the best I ever had. Not sure what kind of cheese was for Moite-Moite. There was not a single piece of garlic inside, nor a little Kirsch. Ok but could be improved.
When we arrived in the afternoon the hotel restaurant and terrace was packed with tourists and the staff was extremely busy. Despite this Jasmin and Victoria found time to welcome us and to have us checked in eventually. Our rooms was extremely large, locaed on the third floor with view of the inner part and the fountain of Gruyere. Water pressure and hot water supply was excellent. There is even a lift to the third floor, which makes for a very comfortable stay.. We can recommend this hotel for one night stay to experience this quaint village after all the tourists have gone.

United KingdomCheck in was a little slow - we had to wait about 10 mins to check in as no-one was available. The staff seemed to be more interested in serving food/drinks for lunch customers. The room was uncomfortably hot on our first night and we were unable to sleep well. We did go downstairs at about 10.30pm to see if we could request a fan but there was no-one around and everything was locked up. On the following morning we requested a fan and one was readily provided. As there is no aircon in the room and they clearly had a fan available it would have been good to see this provided as standard during hot weather.

We had the new apartment next to the hotel, well equipped and laid out with a good terrace with a lovely view. Friendly staff. We parked in P2 as P1 was full about 4pm but were able to move up to P1 at 6pm - not a long walk.

United KingdomBreakfast not worth the €15 wish we'd eaten elsewhere. Wasn't replenished thoughout the service, so ended up picking at scraps after 9am. Had to ask for butter, had to wait to be able to ask for a coffee, staff unavailable. One lady with blonde curly hair was great, the day she wasn't there seemed chaotic.
Large room, amazing views, reduced price for parking in village available. Clean and comfortable. Perfect location for all of Gruyères. Restaurant was nice.

AustraliaThis was the worst hotel I have ever stayed in. First check in was from 2pm, we arrived after 2pm and the room had not been cleaned so all we could do was drop our bags and leave. I don’t think the floors were mopped as our socks were dirty after we walked on the floor The hotel - if you can call it that is disorganized and run by what seems inexperienced young people. There is no reception, just a table in the restaurant. The sofa bed mattress is uncomfortable and lumpy. The pillows are completely flat and grainy, I don’t think they have been changed since the hotel did the renovation. On top of that they could not provide any other pillows so we slept on the mattress alone. There is no ac and no fans which makes the room very stuffy and uncomfortable- we tried to sleep with the windows open but the noise from the town square and little area between the castle walls has people in it until close to midnight so no chance of sleeping. Further you can hear every step from upstairs - again no sleeping. The breakfast is very average and limited compared to everywhere else we have stayed in Europe. This is such a disappointing experience considering the cost, location and the history of the building. I do not recommend staying here.
The view from the back bedroom was the only good thing about this property.
